Chimichurri is a classic Argentine sauce made with fresh herbs, garlic, chili, vinegar and olive oil. The fresh and tangy flavour makes it a perfect complement to grilled meat, but it also works wonderfully with vegetables, fish or as a dressing in salads. When you chop the ingredients by hand rather than blending them, the sauce gets both better texture and a more rustic appearance.

fresh oregano

garlic

small red chili

red wine vinegar

olive oil
Salt
Freshly ground black pepper

Instructions
Step 1/6
Finely chop parsley and oregano.
Step 2/6
Peel garlic and chop it finely.
Step 3/6
Chop the chili.
Step 4/6
Mix everything together in a bowl with red wine vinegar and olive oil.
Step 5/6
Season with salt and pepper.
Step 6/6
Let the chimichurri steep for at least 15 minutes before serving.
