Pork tenderloin casserole is a familiar favorite on Danish dinner tables, and for good reason. It is genuine comfort food that both young and old love to enjoy.
If desired, you can add more vegetables in the form of pearl onions and/or bell pepper cut into cubes.
Enjoy the pork tenderloin casserole with rice or mashed potatoes.

Ingredients

large onion

mushrooms

pork tenderloin
oil for frying

tomato paste

paprika

dl
chicken stock or bouillon

dl
whipping cream

g
cocktail sausages
200
g
bacon cut into cubes
salt and pepper

Instructions
Step 1/11
Peel and chop the onion, and slice the mushrooms.
Step 2/11
Trim the pork tenderloin, and cut it into approximately 1 cm thick slices.
Step 3/11
Brown the meat in oil in a large casserole in several batches, season with salt and pepper, and set it aside.
Step 4/11
Fry the mushrooms in the same casserole until they release moisture and take on color.
Step 5/11
Add the onion, and continue frying until the onions are clear.
Step 6/11
Return the meat to the casserole along with tomato paste, paprika, chicken stock and cream.

Bring the casserole to a boil, and let it simmer for 15 minutes.

Fry the cocktail sausages in oil in a pan until they take on color. Add them to the casserole, and let it continue to simmer until the meat is tender.

Season to taste with salt and pepper.

Fry the bacon until crispy, and let it drain on paper towels.

Sprinkle with bacon pieces when serving, and enjoy the pork tenderloin casserole with rice or mashed potatoes.
