Here's a simple, light vegetable dish that works perfectly as a side whenever Italian food is on the menu. If you feel like it, sprinkle a few chopped herbs over the top when serving. Serves 4.
Ingredients
- 1 bunch of green asparagus
- 1 small organic lemon
- 10 g Parmesan
- Olive oil
- Salt and pepper
Instructions
Trim the asparagus and peel the lower part of the stems if needed.
Finely grate the lemon zest and the Parmesan.
Fry the asparagus in olive oil until it takes on a nice colour, then season with salt and pepper.
To serve, top with the grated lemon zest and Parmesan.
