Flash-fried tuna is a delicious dish, which here is combined with an Asian-inspired salad and a dressing made with soy, ginger and honey. The dish is perfect as an appetizer or as part of a sharing meal with several small dishes.

large tuna steak, approx. 400 g

black sesame seeds

white sesame seeds
Oil for frying

mango

cucumber

spring onions

bunch
coriander

handfuls
mixed salad leaves, e.g. frisée
Optionally a little sesame seeds for garnish

Instructions
Flash-fried tuna
Step 1/7
Cut the tuna steak into appropriate pieces about 4 cm wide, and roll them in black and white sesame seeds.
Step 2/7
Flash-fry the tuna in oil in a hot pan for about 10 seconds on all sides.

Cut the mango into elongated pieces.
Step 4/7
Cut cucumber and spring onions into julienne (thin strips) – optionally place the spring onions in ice water so they curl up.
Step 5/7
Roughly chop the coriander.
Step 6/7
Cut the tuna into thin slices and arrange them on a plate together with salad leaves, cucumber, mango, spring onions and coriander.
Step 7/7
Optionally garnish with a little sesame seeds, and serve with the soy dressing.
Soy dressing

Stir all the ingredients together until the honey is dissolved.
