Birria tacos are a Mexican dish where beef is braised tender in a sauce made from dried chilies, before the tortillas are dipped in the braising liquid and fried crispy with cheese and meat. The consommé is served on the side – ready to dip the tacos in between each bite.

g
beef chuck

dried ancho chiles
2
dried guajillo chiles
1
onion, peeled and cut into quarters
6
cloves
garlic, peeled
2
large tomatoes
1
tsp
cumin
1
tsp
dried oregano
2
tbsp
apple cider vinegar
Neutral cooking oil
750
ml
beef stock
2
bay leaves
Salt

small corn tortillas
150
g
shredded cheese, e.g. cheddar
1
small onion, finely chopped
1
bunch
coriander
Lime

Instructions
Step 1/6
Remove the seeds from the chiles and pour boiling water over them. Let them steep for 15 minutes.
Step 2/6
Blend the chiles with onion, tomato, garlic, spices and vinegar.
Step 3/6
Brown the meat in oil in a pot, add the chile sauce, stock and bay leaves and let it simmer for 3–4 hours, until the meat falls apart.
Step 4/6
Shred the meat and mix it with a little consommé (the braising liquid from the pot).
Step 5/6
Dip the tortillas lightly in the fat from the consommé, fill with cheese and meat and fry them crispy on the griddle.
Step 6/6
Serve with finely chopped onion, coriander, lime and the hot consommé.
